In fried food, Headcel Hypromellose (HPMC) significantly reduces the oil intake thanks to its water-absorbing and thermal-gelation properties. As products are heated in oil water will evaporate, creating a void which tends to fill with oil during deep frying. With the addition of Hypromellose, water will be retained, preventing it from evaporating. The hypromellose in combination with water will transform into a thicker substance when heated, and will return to its original form when cooled.
Headcel Hypromellose is used in gluten-free bread to provide the characteristics that the gluten would normally provide. Due to its thermal gelation and subsequent water binding, adding Hypromellose will improve the structure of the bread during the baking process. Hypromellose will also add volume to the product due to its foam-promoting properties.
HPMC (Hydroxypropyl Methyl Cellulose / Hypromellose) is permitted to be used as a food additive for use within the European Union. Its unique identification code (E-number) is E464.
